Thai sweet chilli prawn

This is the quick recipe for hungry tummys.

Preparation – 5 minutes
Cooking Time – 10 minutes

Ingredients

– tspn olive oil (mild)
– 1 courgette sliced
– mixed mushrooms sliced
– 1 tin coconut milk
– 1 tbspn curry powder
– 1 tspn fish sauce
– 3 tbspn sweet chilli sauce
– 180-200g king prawns
– small tin sweetcorn
– 120g fine egg noodles

Instructions

1) heat olive oil in a wok and add courgette and mushrooms. Stir until soft.

2) meanwhile put small pan of water to boil

3) add to the courgette and mushrooms the coconut milk, curry powder, fish sauce, sweet chilli sauce and bring to simmer

4) add prawns and sweetcorn

5) add the noodles to hot water and when cooked drain, put in the bottom of a bowl

6) add the mixture and enjoy!!
